| Evelyn FitzGibbon founded California Tart Company in 2008. Having spent many years as a chef in Paris where she became immersed in the history of the city, she also became fascinated by the history and origins of food. Having witnessed first hand even in the food capital of the world, the decline in the quality of the food that was being consumed daily she was on a mission. The dish that captured her imagination was the noble tart, which according to the Oxford Companion to Food made its debut during the 14th century. In an effort to sustain the highest quality of the food we eat California Tart Company aspires to counteract fast food and fast life and the growing disappearance of healthy food traditions and people’s dwindling interest in the food they eat, where it comes from, and how it tastes. In order to return toward the pleasures of the table California Tart Company is committed to preparing all of their tarts with the highest quality organic, locally grown fruits and vegetables. |
